
Ingredients
1 large (or 2-3 small) zucchinis
3-4 cloves garlic, crushed
olive oil
1/4 cup chopped fresh herbs – parsley, dill, basil, etc
1/4 cup grated parmesan or crumbled feta / goat’s cheese or your favorite variety
Method
- Heat olive oil until shimmering, then add garlic and fry until aromatic.
- Spiralize half your zucchini (doing it as needed means you don’t worry about it oxidising.) You may want to snip the spirals in half so they are about the same length as normal spaghetti.
- Drop zucchini noodles into hot fry pan. Add salt to taste and move about with tongs or by flipping the pan, until all strands have touched the hot base, and have begun to soften. Fry for less time for more al dente noodles.
- Reserve noodles in bowl and repeat for second half.
- Now return all cooked noodles to the pan, add herbs and cheese, season to taste.
- Serve immediately in bowls. You may also want to add protein with an egg (fried or poached), or meat topping.
